Experiment with Almond Flour

So we have recently begun (loosely) following the Paleo diet.  We are not super hard core about it, but have eliminated many things from our diet and are definitely feeling the difference.  Anyway, yesterday I saw Almond Flour in the store and thought, let's give it a try!  I looked up some recipes and found this one that looked so good, I had to run back out to the store to get a few more things.

Gluten Free Cranberry Orange Scones
2 cups blanched almond flour
¼ teaspoon celtic sea salt
1 teaspoon baking soda
½ cup dried cranberries
½ cup white chocolate chips
1 tablespoon orange zest
1 egg
2 tablespoons agave nectar
  1. In a large bowl, combine almond flour, salt, baking soda, cranberries, chips and zest
  2. In a smaller bowl, combine egg and agave
  3. Mix wet ingredients into dry
  4. Knead dough with hands if necessary to ensure proper distribution of ingredients
  5. Form dough into 2 little circles so that each one is about ½-inch in thick
  6. Cut each circle like a pizza, into 8 slices
  7. Using a metal baking spatula transfer to a parchment paper lined baking sheet
  8. Bake at 375° for 10 minutes
  9. Serve
Of course white chocolate isn't exactly acceptable in the diet, but like I said, we're not super hard core.  One reason I made these is because my husband usually doesn't like scones because he thinks they're too dry.  Well, he said these were "super yummy"!  Mission accomplished!  I think the almond flour added an extra special flavor and made them more moist as well.  My cousin saw my picture on Facebook and said, "send me some!"  Well, they're so good, I'm going to!  So who says eating healthier doesn't always taste better?  I think in this case, it definitely does!  Aside from the chocolate, there is no sugar, just agave.  They were easy to make, so enjoy!  Merry Christmas!!
