Paleo Fish Tacos

For those of you who were interested in the fish taco recipe... -Everyday Paleo Family Cookbook, By Sarah Fragoso Fish Tacos with Spicy Slaw 1-2 lbs wild-caught cod fillets Marinade Freshly squeezed juice from 1 lime 1 tbsp olive oil 1/4 tsp chipotle powder 1 tsp ground cumin 1/2 tsp salt Spicy Slaw 2 cups shredded green cabbage 1 cup diced mango 1/2 cup diced cilantro leaves 1 1/2 cups peeled and diced jicama 1 fresh jalapeno, seeds removed and minced (optional) 1/4 cup mayonnaise (she makes her own, I just used out of the jar) 1/8 tsp chipotle powder 1/2 tsp ground cumin For tacos: Butter or Romaine lettuce leaves Diced fresh cilantro Sliced radishes Lime wedges 1.  In a medium-sized bowl, whisk together marinade 2.  Put the fish fillets in the bowl of marinade and gently rub the marinade into them; let the fish soak for at least 15 min. 3.  In the meantime prepare the spicy slaw 4.  Rinse and dry several large butter or Romaine let...

It takes a village, no joke.

Who was it that said "it takes a village" to raise children?  Well, they could not have been more right.  This was a thought I had this morning as I was washing dishes, crying my eyes out, with two crazy people screaming their heads off in the background.  And it was only 9:30 AM.  I mean, my ears physically hurt. My dream world would involve living on a commune with several other families, homeschooling our kids, growing our own food, having goats, chickens...you name it.  I have days where I feel good, the kids listen some of the time and I get things accomplished.  Then every other day, I'm melting down into tears with my fingers in my ears and screaming back because that's the only thing that's getting them to listen.  It doesn't sound good, but it's the truth.  I have a lot of friends on Facebook that commiserate with me, encourage me and understand what I'm going through; but that's not enough.  I want to go out and drink wine with my...

Inauguration Inspiration

I am more often than not very critical of the country in which I live.  I admittedly do not have a lot of pride in the US.  Many things rub me the wrong way...why we can't get our act together and have free healthcare like other countries do, why we're so attached to our guns, why we have this entitled view that somehow God favors us above other countries....I could go on and on.  But that's not why I'm writing this. This morning I saw part of the Presidential Inauguration (as much as the kids would allow me) and I was inspired to change my view.  One of the people who spoke was a female civil rights activist.  And it hit me, there have been countless people in US history who have had more reason than I to question or doubt our country; but instead they persevered and CHANGED it.  A news anchor was talking to a woman who had pictures of her family, some who were slaves, pinned inside her coat.  She was talking about how far we've come that for a seco...

A Definite Calling

Norm and I met in college.  I won't go into the whole story right now but when I knew I was really "falling" for him, I was watching him preach in one of Jim Crain's classes.  Jim passed me a note that said "If you're willing to be a pastors wife, this one's a keeper".  Well, needless to say, he is not a pastor of a church at the moment.  However, I'm not going to say he's NOT a pastor.  He's recently started his own blog simply titled "Random Stuff From My Brain".  As simple and cute as the title is, his words are profound, encouraging and inspiring.  It's clear that the calling is still there...whether it's to be the pastor of a church, a teacher or a writer...God has given him a definite gift and a definite calling.  It's fun for me to read his blog and remember why I fell in love with him in the first place.  He is real, honest, and loves Jesus.  I married this guy!  Hee hee.
